There has to be some error there. We're only open on Fridays? We're closed on Fridays? Weird.

I suspect that English is not their first language, and that they were led astray by the peculiar syntax of signage plus the feeling that they were supposed to say "sorry" as so many explanatory signs do.

In the 70s, there was a head shop in Ft. Collins who had used simple surgery to make a "Sorry, We're OPEN" sign that I, simple soul, found amusing.
